Lea and Perrins sauce is a sweet/ spicy liquid sauce accompaniment and additive to meat and vegetable dishes. Based on malt vinegar, Lea and Perrins sauce is a secret recipe but is rumoured to contain molasses, sugar, salt, anchovies, tamarind extract, onions, and garlic and other ingredients which may include cloves, soy sauce, lemons, pickles and peppers. The mixture is carefully matured over a period of up to 12 months until deemed excellent enough to bottle.
